When it comes to no-bake desserts, cold cheesecakes come to mind first. Especially now, when it’s getting warmer outside, she’s perfect. I also admit that this is one of my favorite cakes. Below you will find proven recipes for two of this type of cheesecake.

Cold Yogurt Cheesecake

  • 750 gm greek yogurt
  • 130g icing sugar
  • 1 vanilla bean
  • 2 tablespoons of gelatin
  • 200 g heavy cream 30%
  • 300 grams of blueberries
  • American blueberries
  • Mint
  • 120 gm mascarpone cheese
  • 1 tablespoon of powdered sugar


Dissolve gelatin in boiling water. Mix yogurt with powdered sugar. Add vanilla pulp.

Whisk the cooled cream until it freezes. Add slightly cooled gelatin to milk with sugar. Mix well (preferably with a robot so that lumps do not form). Add the whipped cream. Mix gently. Pour the blueberries and mix again. Pour into the mold – preferably with a ceramic bottom and silicone edge (the traditional form should be lined with baking paper, with the paper freeing outside the edge). Put it in the fridge until the cheesecake hardens.

Make a cream. Mix mascarpone with powdered sugar. Grease the top of the cooled cheesecake. Garnished with blueberries and fresh mint.

For lovers of coconut flavor – Coconut Cheesecake!

  • 160 g butter biscuits
  • 2 tablespoons of cocoa
  • 100 grams butter
  • 600 grams white cheese
  • 50 gm powdered sugar
  • 1 teaspoon vanilla extract
  • 400 ml of coconut milk
  • 2 tablespoons of gelatin
  • 1 mango
  • 1 lemon jelly


Crumble biscuits in a bowl. Mash with a wooden potato masher. Pour cocoa and mix. Pour in the melted butter and mix well again. Put them in a springform cake tin (18-20 cm diameter). get over. Cool in the fridge.

Pass the cheese twice in a meat grinder. Sweeten, fragrant with vanilla extract, pour in coconut milk and mix.

Add cooled gelatin (dissolve it first in 1/3 cup of boiling water). Mix again and pour over the bottom of the biscuits in a springform pan. Put it in the fridge.

Cut the stone from the mango. Peel and chop the fruit and put it in a blender. Pour the sedimentation gel (dissolved in 300 ml of pre-boiled water) and mix. Pour over the cooled cheesecake. Put it in the fridge for a few hours. Before serving, garnish with lemon balm.

I also encourage you to prepare a dessert that is popular in Lithuania. Usually used for this: biscuits or cookies, cocoa, butter, sugar and powdered milk. Since the preparation of this cake does not require a lot of energy, you just need to mix the ingredients and cool everything, this is called sloth. Below I present the description.

cake “lazy”

  • 250 gm butter
  • 4 tablespoons of cocoa
  • 1 cup sugar
  • 1 cup water
  • 1 cup espresso
  • 500 grams powdered milk
  • 200 grams of biscuits
  • handful of almonds
  • 1 cup drink
  • powdered sugar for decoration

Melt the butter. Add cocoa, then sugar. mix up. Add water and espresso. After cooling in batches, add powdered milk. Chop the previously roasted almonds, chop the crackers and sprinkle on the mass. Pour the rum and mix well. Use wrapping paper to make neat rolls. Put it in the fridge. After about 4 hours, remove and remove the tin foil and sprinkle with powdered sugar, wrap in gray paper (so that this part of the sack sticks), and attach to the raffia.

Feet cut into rings.

If we do not want to bake cakes, but quickly prepare something sweet, then we often reach for crackers or chips. Both products are popular and available at any grocery store. If we make the right mass and put with it the said nuts or crackers, we will get a delicious and simple homemade dessert without baking.

  • 1 box of square wafer biscuits
  • Chocolate Nut Cream
  • 1 handful of hazelnuts
  • 3 boxes of school biscuits
  • 1 vanilla pudding
  • 450 ml of milk
  • 3 tablespoons of honey


Put the wafer with the ready-made chocolate cream. Before this, put the jar in a bowl with hot water – so that the cream is easier to spread on the fragile chips.

Cook vanilla pudding – in milk. When it is a little cool, spread it evenly on the last wafer. Put the biscuits on the pudding. Put a hazelnut on each biscuit and pour a drop of honey on it. Honey works like glue and looks nice.

We are able to prepare…even a cake without baking! It will surely be an original dessert for a birthday, name day or summer barbecue. It takes a relatively long time to prepare, but it is definitely worth the final effect. Here is the recipe.

Cake without bread

  • 170 grams of biscuits
  • 2 tablespoons of cocoa
  • 100 grams butter
  • ½ liter cream 36%
  • 3 teaspoons of gelatin
  • Quarter cup of hot water
  • 1 tablespoon of vanilla sugar
  • 1 kg of frozen black currants
  • 8 tablespoons of sugar
  • Half a cup of hot water
  • 6 teaspoons of gelatin


Put the biscuits in a blender and mix them in the pulses to get a crushed biscuit, but not too soft (you can also sprinkle the biscuits on a pastry board and crush them with a rolling pin). Add cocoa and soft butter. mix up. Using this block, glue the bottom of the springform molding (24 cm in diameter). You can use a small roller to flatten it and compress it well. Put the cake pan in the fridge.

Dissolve 3 teaspoons of gelatin in ½ cup of hot water. Stir and leave to cool.

Beat the cooled cream well until it freezes. Add vanilla sugar. Finally, pour in the cooled gelatin and mix. Put the cream mass on the crisp bottom and return to the refrigerator.

Put the thawed black currant in a saucepan, sprinkle with sugar to taste (you can give more or less, depending on the acidity of the fruit) and put a little gas until it releases the juice and begins to boil – the fruits should boil. Be firm, although currants can also be overcooked and blended to obtain a smooth mass.

Dissolve 6 teaspoons of gelatin in ½ cup of hot water. Add it to the hot fruit, mix and leave to cool. Make sure that the mass does not completely harden. After it has cooled, but still in a liquid state, translate the currants into a creamy mass. Align the top, put it in the refrigerator for about 2 hours.
